Our Mission: Empower the foodservice industry and diners alike to reduce our collective footprint, bolstering the health of our planet and its people.


Now more than ever, the foodservice industry is embracing a new responsibility: operating in environmentally conscientious ways, from sourcing food to conserving resources. Which is good, because it’s not just the planet they’re serving.

From diners to event planners, the public wants to support restaurants and businesses who share their values and commitments. It influences their dining decisions as much as menus or prices.

But restaurateurs don’t always know the steps to take, or the cost savings they could enjoy by taking them. The public doesn't always know how to identify those restaurants. Both need a partner—for resources, support and education. Next Bites is that partner.

We were started in 2011 by Eloise Karlatiras as the Green Chicago Restaurant Coalition, an idea conceived in 2009 by Chicago Magazine’s Green Awards winners, Dan Rosenthal and Ina Pinkney. When our resources and reach began extending beyond the restaurant industry and beyond Chicago, a new name was needed. GCRC became Next Bites in 2016.


Eloise Karlatiras

Outreach and Engagement Chair |

Eloise founded Next Bites in 2011, bringing passion and experience in sustainability, foodservice operations, environmental conservation project planning, strategic vision for organizational growth, and social media marketing. She continues to guide Next Bites from the board. Follow her on instagram.


Roxana Kayvani

Roxana is the Vice President of Sales and Product Development at Fresh and Ready Foods, a gourmet grab and go company for retail and foodservice. She’s also the Founder and Owner of Roxana's Kitchen, where she indulges her love for cooking by exploring and sharing new recipes. Follow her on twitter and instagram: @RoxanasKitchen.


Zoe King

Vice Chair/Treasurer |

Zoe is the Controller at Altimus Capital, LLC, a parent company for five businesses focused in the commodity, energy and IT sectors. Through one of these businesses, Verde Solutions, Zoe has spent several years working with business owners to help them bring sustainable solutions into their operations. Zoe joined Next Bites in 2016.


John Hamilton

John is the Managing Partner of JCH Partners, an investment company which helps build companies that manufacturer and distribute sustainable foodservice products. These include The Onyx Company, Better Earth, and Renew Packaging operating in North America, Europe, and Asia with offices in Chicago, Atlanta, and Beijing.


Amy Ellingson

Amy has a background in economic development and public policy and currently works with Label Insight, a data company helping consumers understand what’s in the products they use. An enthusiastic supporter of Chicago’s food and beverage community, Amy spends her free time eating carbs and pulling as many corks as possible.


Elder Calderon

Programs Manager |

Elder is an Energy Engineer with ComEd, where he’s responsible for comprehensive energy assessments, project design and energy modeling. He has extensive experience implementing energy efficiency programs for large and small, commercial and industrial businesses in Chicago and the midwest.


Erin Drain

Board Chair |

A board member since 2014, Erin worked in Chicago’s wine business as a retailer, educator, and sales representative for ten years before joining Simple, a small software startup for independent restaurant owners and operators. In her spare time, she explores Chicago’s restaurants, watches classic films, and tries out new recipes at home.


John Cockrell

Communications Chair |

John is a creative director and marketing writer whose clients range from international brands to Chicago non-profits. He joined Next Bites in late 2015 to help during its renaming and rebrand. Kate Gurke

Kate's interest in food started in graduate school at University of Minnesota, focusing on urban food systems impact on the environment, health and well-being of cities. This brought her to The Urban Canopy, where she runs the Local Unified CSA and farmers market programs. She passionate about making healthy and sustainable food accessible to all, and about making pies, pasta and fermented foods at home.

Social Media Manager

Talented, enthusiastic and communicative, the right person for this role use Next Bites’ social media properties to grow and engage our audiences, create and share content, and help define our voice in the social media space.
